Custom Cutting Boards, Handmade in New Orleans

Pagani Woodworks builds custom cutting boards and butcher blocks by hand in a New Orleans workshop — the same bench where Seven Six drums are made. Every board is cut, glued, milled, sanded and finished one at a time, with wood chosen for its grain, density and how long it will last in a working kitchen.

New Orleans is a city that cooks. A good board is something you reach for every day, for everything from a pot of gumbo to a holiday spread, and it should last for decades. Get in touch to commission one built to your size and style.

End-Grain or Edge-Grain?

End-grain butcher blocks are built from short blocks standing on end, so your knife slips between the wood fibers instead of cutting across them. They are thick, heavy and kind to your knives — the board for serious prep. Edge-grain boards are built from long strips laid side by side. They are lighter, easier to move, and ideal for everyday chopping and serving.

Caring for Your Board

Wash by hand with warm soapy water and dry it standing up. Never soak a board or put it in the dishwasher. New Orleans humidity is hard on wood, so re-oil the board with a food-safe board oil whenever it starts to look dry. Cared for this way, a handmade board will last a lifetime.

Cutting Board Questions

Can I order a cutting board in a custom size?
Yes. Every board can be built to the dimensions of your counter, island or serving space. Tell us how you will use it and we will recommend a thickness and construction to match.
What is the difference between end-grain and edge-grain boards?
End-grain boards show the ends of the wood fibers, which are gentle on knife edges and very durable — the classic butcher block. Edge-grain boards show long stripes of grain, are lighter, and make excellent everyday prep and serving boards.
